Finishing salts are created. A finishing salt is just what you would expect - it is used in the final stages of cooking, or on the table to give extra punch to the dish. Everyone is familiar with the old standby finishing salts such as onion salt, garlic salt, or celery salt. However any flavor can be added into salt to create a new and wonderful product.
Some of the more interesting things we carry at SalemSpice are Thai Ginger Salt, Espresso Salt, Chipotle Salt and Habanero Salt. Each of these are manufactured by taking sea salt, creating a slurry with clean water and adding in a natural flavor then evaporating the water to create a clean and intensely flavored salt.
Using finishing salts can add depth and intensity to your cooking. However use of a flavored salt at the beginning of your cooking will result in all the flavor being cooked out. Use flavored salts after most of the cooking is done, and taste frequently. Remember that salt is a great flavor enhancer, but there is a fine line between adding salt to enhance and bring flavors together to the perfect point and adding so much salt that all you taste is the salt.
