Traditionally, seawater is captured in large shallow pools and the sun evaporates the water letting the salt precipitate. Large rakes are used to scoop up the salt at the bottom of the pool and layer it in piles to be picked up and packaged.
Salt is a crystal
Salt is inherently a crystal formed through a bond between Sodium and Chloride. The term "Kosher" Salt really means 'no additives'. It does not necessarily mean that it has been made with the approval of a rabbi. Kosher salt is formed into flakes which are pyramid-shaped. In this way, the salt will adhere to the surface and tends to melt slowly. Salt, being a natural desiccant, is then used to cure meat and kosher salt would absorb the moisture better than rock salt. Another aspect of kosher salt is that it has no additives. It is important to not use salt treated with iodine when pickling or preserving food as the iodine will color the food.
